Congratulations Jason, you have entered the arena of difficult
problems. You have a difficult time even defining moisture of
shredded fruit. As it dries it shrinks making the usual methods of
measuring the water in a given volume that most instruments depend
on impossible until the fruit stops shrinking. Then you have to
assure or assume even packing to use any non destructive I can think
of.

The only way I know that will work for sure is oven drying. You can
speed it with a microwave oven but you need to carefully test your
methods against standard oven drying to make sure you aren't burning
the fruit.

If the relative humidity of a block of plaster with fruit around it
will work for you there are many ways to measure that.
