I don't know what you include under the heading of 'soil physics' and don't
know the type of agricultural environment your students will end up working
in, but I would suggest a heavy emphasis on 

1) salt management in irrigation
2) use of soil moisture measuring equipment both automatic and manual
3) use of logging equipment 
4) irrigation control technology.
5) water application technology - (drippers vs  sprinklers etc)
